Tis' the season......Zucchini Bread Recipe - Well deserved re-post!


Get your pen and paper out, this is a good one! My mom gave me this recipe and I love it. You know it is good when you do not even need to put any butter on it! It freezes well and it makes two loafs.



4 Eggs
2 cups of Sugar
1 cup Vegetable oil(You can substitute applesauce but it is not the same)
1 tsp vanilla
3 1/2 cups of flour
1 1/2 tsp baking soda
3/4 tsp baking powder
1 1/2 tsp salt
1 tsp cinnamon
3 cups unpeeled grated zucchini


Set oven to 350 degrees. Beat eggs gradually alternating sugar and oil. Add vanilla and beat. Combine all dry ingredients together and add gradually to cream mixture. Add grated zucchini. Grease and flour two loaf pans. Bake for 55-60 minutes.

You are right! Our zucchini bread recipes are almost identical. Must be a really basic recipe. Your banana bread recipe is nearly the same as mine too. Small world.

My m-i-l made us two loaves of zucchini bread this summer. They lasted about a week. We love it! She adds chopped pecans.
