Throw Tradition out the Window!

Well, not for everything but maybe for this. It was late, I did not feel like going with the Monday Menu Plan, to cook for only me. The fridge is pretty empty and wouldn't you know, there are no leftovers to claim! So what do you think I went to? The good old standby, PBJ!

So how many of you have Grape Jelly still with your PBJ? I can actually say that I do not have a jar of grape jelly in my house. And, as you can see, I have a few different jams and jellies to offer up with my PBJ. All but one I made last year, the pineapple jam I brought back from my trip to Hawaii this past spring. A great item to bring back from Hawaii for gifts, so good on toast! My assortment is made of peach jam, orange fig marmalade, Maker's Mark peach preserves, strawberry jam and black raspberry preserves.

I decided to go with the black raspberry preserves, 2007 vintage reserve. All of my raspberry jams I consider to be reserves due to the time and effort it takes to make them. These are tiny black raspberries, picked from my yard, giving me battle scars on my legs and arms every year! I yield only about 8 jars a year and rarely give them out. This year was a tough year for raspberries, too much rain so I was unable to take advantage of picking, the birds got most of them. That is o.k., they have to eat too and they also spread the seeds to give me more raspberry bushes for next year.

Look At This Beauty!

This is my first year growing the Italian Eggplant, I am liking the looks of it! I would say this one is pretty ready to be picked, not for me to eat. I will give it to my parents, my hubby does not eat eggplant. Hard to make for one person! Check out Smitten Kitchen for a Grilled Eggplant with Caponata Salsa recipe which looks awesome! My NYY/knit friend Kathleen tried it and raved how good it was.

Bugaboo Book Review

Duck is my word of the week so I will be reviewing Ollie the Stomper by Olivier Dunrea. Ducks love to be in the water and so do I, we have something in common, except I do not have feathers!

The book starts out with introducing Ollie, Gossie and Gertie, all goslings. Both Gossie and Gertie have a pair of boots to wear out and start their journey tromping through the straw. Ollie does not have any boots and follows after them, stomping all the way. Mommy says Ollie is the youngest one and he so wants to be like his older siblings, trying to keep up with their adventure.
Ollie does not look happy when he finds Gossie and Gertie hiding in the pumpkins. They stomp on over to Ollie and do something that mommy says is very nice, they share their boots with Ollie! A new adventure begins and Ollie is now the leader followed by Gossie and Gertie! In the end, they all enjoy being together, boots or no boots.

Wordless Wednesday

Well, I had a picture of a lake we are staying at right now in Maine, and on the lake is several Bald Eagles, sitting in the trees right above our canoe! The wind is blowing 15 MPH and we are being pushed to shore, paddling super hard, I think I can try out for the rowing team now and be in the 2012 Olympics. Yes, even Bugaboo Girl is on the canoe and she seems to be in survival mode holding on and being very quiet. Always an adventure. Needless top say, the pictures will have to wait due to very low connectivity up here in Maine, way down east! Hope everyone is well. I am lucky to get this post in today!

Green Bean Salad With Roasted Pecans

I am still in overload with green beans! Bugaboo Girl and I are out every day picking green beans for enough to have every meal. I start to get bored of the same old recipes so here is one with roasted pecans. We receive a few bags every year for Christmas, which we love, from the relatives down south. I store them in the freezer and use them throughout the year. Digging around in the chest freezer, I found a few left, about a half a cup enough for this dish. This is a serving for 6.

Prep and steam green beans for six. Don't steam them too long, only about 2 minutes to keep their color and crispness.

Dry roast about 1/2 cup of pecans in a pan over medium heat for about 5 minutes. Coarse chop the pecans and add them to the green beans.

In a separate bowl, mix together the following ingredients.

1/4 cup EVOO
1 TBSP Red Wine Vinegar
1 TSP Dijon mustard
1 TSP salt
1 TSP pepper

Pour over green bean and pecans, mix and store in fridge until cold.

Got Tomatoes?

Oh boy do we ever! This is a sea of tomatoes, the plants are even taller than this picture portrays, once we tied them up the on the 6 foot stakes, they are about 4 feet high loaded with fruit. I think this will be a bumper year for us with canning. I like to do a lot of whole plum tomatoes and use the "bump and dents" for sauce. This will last us until the harvest.
