Champagne Food Friday


Some mornings I have all the best intentions to get up early and make something for breakfast for my husband to take on the go. Sometimes this does not always work out. I have an abundance of oranges right now and figured I would make Cranberry Orange Scones. Now you would think there was orange juice in this recipe I chose along with orange zest. The zest was there, the juice was not, kind of strange and a little wasteful. Wait......it gets better.


I have 30 minutes until he leaves for work to do this, a quick look at the recipe and it says 20 minutes to bake. I think I can make it. Start to get the flour and realize that I may not even have enough of flour, measured out exactly 4 cups, took a little out for the board. Then looked to see how much butter, 3/4 of a pound! Wow, that is a lot of butter and thankfully I had it in the fridge and not in the freezer. All this time I am watching the clock, the time is going by too fast.


I start to mix the wet, four eggs and a cup of heavy cream, another shocker since I happen to have heavy cream from the baby showers this past week. Add it to the dry and now I am ready to dump it out on the board. I should have reserved more flour for the kneading, it was very wet dough and sticky. But wait..............I forgot to add the dried cranberries.....aaaaaaaaaaaaahhhhhhh! So I decide to fold them in while I knead it. Tricky but seemed to work. The recipe wants me to roll them out and use a biscuit cutter to cut circles, no time or extra flour for that! It is a few pat pats and on to the cookie sheets, looking a little larger than suppose to but I figure by now what else have I got to lose. Oh wait, I forgot the egg wash, skip it and just dust some sugar on top.......no time!


In the oven to bake for 25 minutes, well forget that he will be taking them for on the go breakfast so I quick make him a PBJ, not as good but will do. How did they come out? They certainly were buttery but did not taste any orange. I think I will stick to an Oatmeal Scone recipe next time, probably easier and won't make me feel as guilty with all of the heavy ingredients in this one.
