Champagne Food Friday

Breakfast is always an important start of the day. I tend to get bored doing the same food and find myself looking for something quick, easy, nutritious and of course it has to taste good! Muffins can sometimes take longer to bake, up to 30 minutes and give yourself an extra 15 for prep time so you are getting up earlier than needed. I found a bran muffin that only takes 15 minutes to bake and actually tastes good. Good ole Fanny Farmer, the recipes seem to never go out of style and are not complicated.

2 1/2 cups Bran
1 1/3 cup wheat flour
1/4 cup brown sugar
2 1/2 tsp baking soda
1/2 tsp salt
2 eggs slightly beaten
1 cup buttermilk
1/2 cup vegetable oil
1/3 cup molasses
1/4 cup honey
1 cup raisins

Preheat oven to 425 degrees.
Mix all dry ingredients together in a bowl. In a separate bowl, mix together the remaining ingredients, then add the dry. Mix until just moist.
Line cupcake pan with paper liners. Fill liners, use an ice cream scooper for ease and consistent amount.
Bake for 15 minutes.
I like to use golden raisins, not as bitter tasting. These muffins definitely taste better warm, try it with pineapple jam, so good!
