Lately, I think Domino has had cabin fever. All she wants to do is look outside at the birds on the feeders and chase my dog Hana. So when I found her in my bathroom sink, I knew she was cruising for trouble!

1,2,3,4.....counting to the number 4

For everyone who watches Sesame Street, this video of Feist singing 1,2,3,4 was on the past couple of days and I cannot get it out of my head. My daughter also loves watching the video. Champagne Food Friday


I love to bake and I have been waiting to try out a new cake, a Pumpkin Sandwich Cake recipe I got from Better Homes. My brother-in-law's Birthday was this past Tuesday and it just gave me the excuse to try it out. It was an easy recipe which has a chocolate frosting and a cream cheese filling, which always is a qualification for me to make a cake for a birthday. I would definitely make this cake again so I thought I would share the recipe with you. As you can see from the picture below, we made a significant dent in the cake. Uncle T seemed to enjoy the cake. Yes, that is a PBR beer, the choice of beer for everyone here right now....must be the economy and the fact Budweiser sold out!


3/4 cup of flour
1 1/2 tsp pumpkin pie spice
1 tsp baking powder
1/4 tsp salt
3 eggs
1 cup sugar
3/4 cup canned pumpkin
1/2 cup whipping cream
1 cup semisweet chocolate chopped
1/2 of an 8 oz. pkg. of cream cheese, softened
1/2 cup powder sugar

Preheat oven 375 degrees. Grease two round cake pans and line bottom with wax paper.


In a bowl, combine flour, pumpkin pie spice, baking powder and salt. In a second bowl, beat eggs and sugar on medium/high fr 5 minutes to thicken. Add pumpkin and mix. Add flour mixture and mix. Pour cake batter in pans and bake for 16-18 minutes testing with tooth pick. Cool in pans for 10 minutes then remove and cool completely on wire rack.

For the filling, beat 1/2 cup of whipping cream to soft peaks, set aside. In a separate bowl, beat the cream cheese then add the powdered sugar, beat until smooth. Fold in the whipping cream with the cream cheese. Spread the cream mixture over the bottom cake layer. Sit the other cake layer on top then frost the outside with the chocolate icing.

Chocolate icing is 1/2 cup of whipping cream heated to a boil on medium heat, pour over 1 cup of semisweet chocolate chopped up. Let sit for 5 minutes then beat on high until mixed and glossy. IF too thick, add more cream, if too thin, chill. Let the chocolate sit for 15 minutes to cool. Frost the outside of the cake, the icing will harden quickly. Store in the fridge until serving.

So cold......


I cannot remember the last we had an arctic blast like this come through my area. Sure I see it on the news in the Midwest, Chicago always comes to mind, way too cold for me. It wouldn't be so bad if there was no wind! I was waking up all night with the wind cranking up against the house. I put out extra suet and bird seed for the birdies today, along with they have my Christmas tree set next to the feeder for a little added shelter! My daughter keeps saying "icy" and "I need a sled, Santa bring me a sled". Looks like that will be the focus for next Christmas. Everyone.....stay warm and cover up in extra layers!!!!

Happy Birthday Terry!


Today is my brother-in-law Terry's Birthday(seen here sitting in his jeep) who is married to my best and oldest friend since 5th grade, Aunty Deb(who is expecting her first baby, a girl this March). We will be having dinner and cake at my in-law's house tonight, suppose to snow but not until later and only a few inches of the messy stuff.
I am in charge of making the cake which will be a pumpkin cake with a cream cheese filling and chocolate ganache icing, oh yum! Got the recipe from Better Homes and have been waiting to try it out. Pictures will come of course and the recipe on Champagne Food Friday so stay tuned!

Water update

A while back I posted about my neighbor who did not have any water starting on September 8th. She had been coming over to my house a few times a week getting water to use for cooking and cleaning. They were digging the well and the contractor seemed to have an excuse for anything when it came time to come over and work on it. Four months and 195 feet later she has water!!! I don't think I could have gone that long without it, even more so in the winter time!

Oh Mama Mia.................

Here we go again............

Is it only me out there that is not too thrilled with this movie? Let me first start off with I am a BIG musical person. I watch TCM and all of the musicals from old to new, Seven Brides for Seven Brothers is one of my favorites. I have gone to a few shows at the Goodspeed Opera House, which in case you did not know is the birth place of Annie.
So what did I not like about the movie? First off, I have heard from many people that the live misical is great. Many musicals have gone to the big screen and turned out just fine. Maybe it was just the cast of actors that were chosen. I was baffled why they could not dub over Pierce Brosnan's voice, I love him from being such a James Bond fan that I had to leave the room when ever he sang!
As for Meryl Streep don't get me wrong, I have a lot of respect for Meryl Streep, she has been in several amazing movies. But for some strange reason, I felt this role was not meant for her. I had to laugh reading a review on Rotten Tomatoes stating "Streep and her ancient co-stars create pure torture whenever on screen together." I would have to say that is exactly how I felt watching this movie. Maybe seeing the movie The Devil Wears Prada tainted me since she is so straight forward, dressed to the hilt compared to wearing overalls and hair that seems to want to look like her co-star daughter, long and no style.
So what about the music? I was waiting for each scene to go into an ABBA song and could not even get into the music. The final scene of the movie with all of them dancing on stage like they were at a concert was probably the best scene, looking like they were really having fun. I guess I have to go see the musical now to get a better idea of why this is so popular.

Cozi your Life

I don't know about you but I would be lost without my daily planner, phone and computer. We have Tiny Trotters on Tuesdays, music class on Wednesday, Art class on Thursday, visit my mom and grandmother on Monday's and Friday is open, mostly for me to do what ever else I may need to do. Then of course you have to throw in doctor appointments, haircuts, grocery shopping and all of the family gatherings that take place throughout the year. My biggest challenge is finding a daily planner that is small enough to put in my handbag but big enough to write all of the activities in. I have taken sticky notes and put them in my planner when I cannot fit all the info I need! The Solution........Cozi!


Cozi is a very cool free web site that helps you simplify your daily schedule. Cozi provides a shared family calendar, customized shopping lists, quick messaging tools, mobile phone access. Right now, I have a note book which I use for either shopping lists, to do lists and also my Christmas list. I am one of those people who start that list right in the new year. Even by using this notebook, I have always felt not as organized as I could be. By using Cozi I now can get shopping lists and schedules on any mobile and everyone one in the family has access to the same information. So in other words, my husband can even see what I want for Christmas off of his mobile phone, no more guessing game for him!
